Papa Bolo is the new hangout spot in Tagaytay City. It is a brewpub that serves quality Filipino craft beer.
During our visit, I learned that Papa Bolo’s name was derived from the legend of the name Tagaytay or “Taga, itay!”. Taga means knife and Itay means Father. I really thought it was based from drinking session of a father and a son. A combination of Filipino word “Tagay! ‘tay” or in English, Shot! Father! Hahaha.
Going back to the Papa Bolo experience. Papa Bolo’s 3 story building is situated just across Sky Ranch. It has an industrial design accented with contemporary artworks.
As soon as we entered Papa Bolo, a staff greeted us and offered a tour of the place. The first floor has a bar at the center. A dining area with barrel inspired seats on the left side and a brewery on the other side. I like that is it spacious and well lighted because of the glass walls.
The staff shared a little bit of history of Papa Bolo and the brewing process in the Brewery area. With Mike Wayne as their brew master, they created 6 signature beers available in Papa Bolo.
The barrel inspired seats extends to the mezzanine up to 2nd floor. Here, you’ll have a view of the bar and the brewery.
Our last stop was Papa Bolo’s roof deck. Half is covered and the other half, open. It has 2 private rooms and a bar.
And for my favorite part, we’ve concluded the mini tour with a beer tasting. They let us try all of the 6 available craft beers: Barkada Bliss (Pilsen), Twin Suns (Double IPA), Bad Pony (West Coast IPA), Cowboy Classic (American Pale Ale), Disco Biscuit (Caramel Ale) and a beer that is Tagaytay inspired, Pina Nina (Pineapple Ale)
Piña Niña is special because they use locally harvested pineapples but my picks are Disco Biscuit (see image below) and Barkada Bliss (first image in this blog).

On our 2nd visit, still ordered the same beers above but this time, we tried Beeramisu. Unique concept of a beer inspired tiramisu.
Papa Bolo is the perfect spot to enjoy a quality craft beer and Tagaytay weather.
UPDATE
During our last visit, these are the available beer flavors in Papa Bolo:
Barkada Bliss (Pilsen), Twin Suns (Double IPA), Bad Pony (West Coast IPA), Cowboy Classic (American Pale Ale), Pina Nina (Pineapple Ale) and Fruity Booty.
Recommendations: If you don’t know which beer to pick, stick with Barkada Bliss. If you like it with flavors, then go with Disco Biscuit or Piña Niña. Twin Suns got the highest ABV (10%).
Tip: If you plan to drink late afternoon to evening, roof deck is the spot.
