After celebrating a special occasion in Anya Resort Tagaytay, we decided to try a new restaurant - just because Cyma is one of our go-to restaurant for Greek cuisine, and it was just a few meters away from our location.

Elaia by Cyma is a new Greek restaurant concept of Chef Robby Goco, under the Cyma Group, which started its operations in November 2024. Tucked away in Silang, Cavite, near Tagaytay, Elaia by Cyma is surrounded by nature, which gives a remote and relaxed atmosphere.

We were looking forward to dining al fresco dining to enjoy the Tagaytay weather. Unfortunately, during our visit, it was drizzling.

Elaia by Cyma offers authentic Northern Greece cuisine with a farm to table concept, sourcing the finest and freshest ingredients from local suppliers.

We started our Elaia by Cyma experience, with some greens. I’m not sure, but I think this is Roka Salata.

We also tried the Oven-roasted Vegetables.

Then, we ordered Moussaka, one of our favorite Mediterranean dish.

For Pasta, we sampled two dishes. First was the Salmon pasta, a tomato-based pasta. For me, it was a light dish because of the angel hair pasta.

Next was Greek Osso Bucco, a tomato-based pasta that includes large portions of fall-of-the-bone, juicy beef shanks. This is my first time trying this dish, and it was surprisingly good, though a bit too oily for me.

The last dish we ordered was from the “Specialties of Elaia by Cyma”, the Chicken Souvlaki Plate. It includes basmati rice, salsa, and pita bread.

To summarize our experience, Elaia by Cyma offers healthy, home-cooked Greek dishes in a relaxed atmosphere. They serve generous portions and high-quality dishes. However, it is important to note that the price are on the expensive side.

Recommendations: Aside from seafood, Elaia by Cyma is known for their lamb dishes.
